Reserve the remaining citrus syrup you can use for breakfast cocktails, sweets, or for additional servings of the drink.
The Bikini Cocktail
Serves 10 guests
Ingredients for the Citrus Syrup (yields 750ml)
300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar
Ingredients for the Drink (yields 850ml, enough for 10)
400ml decent vodka
100ml London dry gin
150ml peach liqueur
200ml clementine syrup (see above)
Fresh cranberries, to garnish
Mandarin essential oil, to finish
Method
To prepare the Cordial: Place all the items into a pot, bring to a light boil, stirring to dissolve. After that, remove from the heat and let it to cool completely. Decant into an sealable bottle, close it and refrigerate it in the refrigerator, it will last for around one month.
To make Premix: Combine the specified liquid ingredients into a large bottle, allow it to infuse for one hour, then pass it through best through muslin, making it fully clarified.
To serve: Measure 85ml of your premix into a cocktail shaker packed with ice, gently stirring carefully for one minute to cool it down. Filter into a chilled martini glass or a similar vessel, decorate with a few cranberries adding the final touch using a brief mist with the mandarin essence over the drink.
